A Fogo Island Fish Tale with Chef Albert Ponzo
Albert Ponzo is the newly recruited Executive Chef of The Royal Hotel in Picton, (Prince Edward County) Ontario. The Royal, currently under re-construction, is set to re-open in 2019. He previously served as Executive Chef at Toronto's iconic Le Sélect Bistro.
Chef Ponzo will bring over two decades of food knowledge along with his passion for producing farm-driven food with the best seasonal local ingredients to Fogo Island Inn serving as Chef-in-Residence from September 21 - 28, 2017.
Reaping the bounty of the Island’s terroir, in collaboration with the Inn’s own Kitchen Collective, Chef Ponzo will serve up dishes inspired by Fogo Island’s land-and-seascapes.
A proponent of sustainable farming and nose-to-tail eating, Chef Ponzo’s flair for working closely with nature and sourcing ethically produced ingredients obtained in a sustainable manner will provide the basis for a collaborative 5-course supper on Saturday, September 23, inspired by the most powerful ocean on the planet—the wild North Atlantic. On the menu: A Fish Tale, a culinary exploration of the evolution of the fisheries on Fogo Island.
This culinary event will be supplemented by further daily discoveries for guests, as Chef Ponzo will lead dialogues each morning at 10 am from Monday, September 25 to Thursday, September 28, exploring themes relating to Fogo Island’s wild foods and traditional staples, such as salt cod, the turnip, partridgeberries, and shoreline herbs.
