Historical Foodways and Forging the Path Forward
June 23-27, 2024
Learn about the foodways and culinary history of Fogo Island and the innovative ways our community sustains itself as a remote island.
Our culinary team uses traditional methods and experimental approaches to create a sustainable and enjoyable dining experience. They simultaneously hold on to the history of this place, while reaching out into the world to develop their own blend of contemporary yet familiar food.
Visit a local apiary, hydroponic farm, and local gardens. Our Executive Chef, Timothy Charles, will discuss the importance of preservation and adaption. Forage for local flora and experience these ingredients on your plate in our dining room. Try your hand at a local recipe in private workshop with our team.
Gather around our table – where there is always a seat for you – and let us share our cultural, social, and economical approaches to food with you.
