Twist on a Seasonal Favourite
What better way to bring a little extra cheer into your home than with a delicious twist on a holiday classic? Our resident mixologist has been diligently testing the best eggnog recipes, so that your Twelve Days of Christmas may be both tasty and bright. Delight your friends and family with this distinctive Fogo Island Inn cocktail that puts an inventive spin on a seasonal favourite.
- 4 cups whole milk
- 5 whole cloves
- 1/2 teaspoon birch syrup
- 1 teaspoon ground cinnamon
- 12 whole egg yolks
- 3/4 cup white sugar
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon ground nutmeg
- 2 1/2 cup light rum*
- *omit for a non-alcoholic treat
Combine milk, cloves, birch syrup, and cinnamon in a saucepan, and heat on stovetop over lowest setting for 5 minutes. Slowly bring milk mixture to a boil.
In a large bowl, combine egg yolks and sugar. Whisk together until fluffy. Whisking briskly, begin to incorporate hot milk mixture slowly into the eggs, making sure not to scramble. Pour mixture into saucepan. Cook over medium heat, stirring constantly for 3 minutes, or until thick. Do not allow mixture to boil.
Strain to remove cloves, and let cool for about an hour. Stir in rum (if using), cream, 1/2 teaspoon vanilla, and nutmeg. Refrigerate overnight before serving.
